Lose Weight

Mmm, well, I can’t say I lost much weight, in fact I think I only lost about 1lb. And despite being quite active this year, what with all the crazy things I’ve been doing, including the half marathon, Waendel Walk and the training for the swimming challenge I thought that I’d be like a racing snake by now! But alas, it’s not to be.  However, I have been eating so much healthier these days and I have felt the benefit. I have discovered salads needn’t be boring. They are simple to prepare and with the right ingredients and the right dressing they can be very tasty. One of my favourites is rocket and baby spinach salad leaves with toasted pine nuts and cherry tomatoes with flaked smoked mackerel with a basil pesto dressing. Nom nom nom!
